Roasted Red Onion Russian Roll with Lemon Cottage Cheese

Ingredients
Russian Roll
500 g Eskort Smoked Russians
4 hot dog rolls
15 ml (1 T) harissa spice
2 red onions, quartered
45 ml (3 T) olive oil
zest and juice of 1 lemon
1 clove garlic, chopped
15 ml (1 T) thyme, chopped
Lemon Cottage Cheese
250 ml (1 C) smooth cottage cheese
zest and juice of 1 lemon
black pepper and a pinch of salt
Method
Russian Roll
Preheat the oven to 190°C.
In a mixing bowl, combine harissa spice, onions, olive oil, lemon zest and juice, garlic and thyme.
Transfer to a baking tray lined with baking paper and bake for 15 minutes.
Fry Russians in the remaining oil in a large pan over moderate heat (approx. 5 minutes each side).
Lemon Cottage Cheese
Place the ingredients in a mixing bowl and mix until well combined.
Serve
Assemble the rolls starting with the Russians, add roasted onions and finish with cottage cheese.
