Assemble the rolls starting with the Russians, add roasted onions and finish with cottage cheese.
Roasted Red Onion Russian Roll with Lemon Cottage Cheese
Ingredients
- Russian Roll
- 500 g Eskort Smoked Russians
- 4 hot dog rolls
- 15 ml (1 T) harissa spice
- 2 red onions, quartered
- 45 ml (3 T) olive oil
- zest and juice of 1 lemon
- 1 clove garlic, chopped
- 15 ml (1 T) thyme, chopped
- Lemon Cottage Cheese
- 250 ml (1 C) smooth cottage cheese
- zest and juice of 1 lemon
- black pepper and a pinch of salt
Method
- Russian Roll
- Preheat the oven to 190°C.
- In a mixing bowl, combine harissa spice, onions, olive oil, lemon zest and juice, garlic and thyme.
- Transfer to a baking tray lined with baking paper and bake for 15 minutes.
- Fry Russians in the remaining oil in a large pan over moderate heat (approx. 5 minutes each side).
- Lemon Cottage Cheese
- Place the ingredients in a mixing bowl and mix until well combined.
