- 500g Eskort Smoked Russians sliced
- 1 onion chopped
- 1 red pepper chopped
- 1 garlic clove chopped
- 1 tin peeled tomatoes
- 1 tin tomato puree
- 1 T paprika
- 1 T dried chilli
- Salt and pepper
- Lasagne sheets
- ½ C butter or margarine
- ¼ C flour
- 3 C milk
- 2 C grated cheese (Cheddar/Mozzarella)
- 3 T oil for cooking
- Heat a pot over a moderate heat.
- Add the oil, onion, garlic and pepper to the pan and fry for 5 min.
- Add the sliced Russians, peeled tomatoes, tinned tomatoes, paprika and dried chillies.
- Allow to simmer for 10 min.
- In a large saucepan, melt butter over medium low heat. Add flour and mix constantly for 1 minute.
- Add the milk in, mixing as you go to incorporate into the flour mixture.
- Season with salt and pepper to taste.
- Layer the lasagne by adding in the Russians in sauce first,followed by the white sauce and lasagne sheets.
- Repeat the process and finish off with white sauce and grated cheese.
- Bake the lasagne in a preheated oven of 200°C for 10 min.
- Serve with fresh bread rolls or crusty bread.
