Ingredients

  • Eskort 1Kg Footlong Chilli Cheese Russians, sliced into 2cm rings
  • 2 red onions, sliced
  • 1 C sundried tomatoes
  • 1 clove garlic, chopped 
  • 3 T thyme 
  • 1 C frozen corn 
  • 2 C risotto rice
  • 1 t turmeric 
  • 4 C vegetable stock 
  • 1 C Muscles 
  • 1 C Shrimp 
  • 1 C calamari 
  • ¼ C chopped parsley 
  • ¼ C Chopped chives
  • Oil for cooking

Method

  • Heat a large pan over a moderate heat. 
  • Add 3 T of oil, the onions, garlic, thyme and Russians to the pan and fry for 5 min. 
  • Add the sundried tomatoes, corn, rice, turmeric and the vegetable stock to the pan and lower the heat, simmer for 10 min. 
  • Add the mussels, shrimp and calamari and cover with a lid, allowing to simmer for 5 min.

 

To serve

  • Serve the paella with the fresh chopped herbs and some extra chili on the side.
