Russians, Pap, Oven Grilled Tomatoes and Baby Cabbage

  • Pap:
  • 750 ml maize meal
  • 1 L hot water
  • 5 ml coarse salt
  • 15 ml whole black pepper corns
  • Oven grilled tomatoes and baby cabbage:
  • 500 g large ripe jam tomatoes
  • 1 small head cabbage, cut into eighths
  • 60 ml olive oil
  • zest and juice of one lemon
  • 15 ml coarse salt
  • 15 ml freshly ground black pepper
  • Eskort Smoked Russians:
  • 500 g Eskort Smoked Russians
  • 60 ml sunflower oil
  • 2 green chillies, chopped
  • 1 bunch spring onions


  • Pap:
  • Heat water in a medium sized pot over high heat, add salt and black pepper.
  • Bring the water to a boil and slowly add the maize meal while stirring with a whisk.
  • Close with a lid and lower the temperature.
  • Cook for 10 -15 minutes.
  • Oven grilled tomatoes and baby cabbage:
  • Preheat the oven to 200°C.
  • Line an oven tray with baking paper.
  • Cut a cross on top of each tomato, place them and the cabbage on the baking tray.
  • Drizzle with olive oil, lemon zest and lemon juice.
  • Season with salt and pepper.
  • Bake in the oven for 20 minutes.
  • Eskort Smoked Russians:
  • Place a medium sized saucepan over a high heat, add the oil and fry the Russians for 2 minutes per side.
  • Garnish with fresh chilies and spring onions.


Serve the pap with Russians and top with tomatoes and cabbage.
