Serve with some chilli oil and some more chopped spring onion.
Russians with Creamy Comfort Potatoes
Ingredients
- Eskort Smoked Russians
- 1 kg small potatoes
- 500 ml (2 C) cream
- 250 ml (1 C) milk
- 2 onions, chopped
- 250 ml (1 C) spring onions, chopped
- 1 clove garlic, chopped
- 5 ml (1 t) white pepper
- salt to taste
- 250 ml (1 C) white cheese, grated
- 45 ml (3 T) flour
- olive oil for cooking
Method
- Preheat oven to 200°C.
- Slice the potatoes into halves and place them on a baking tray. Drizzle with olive oil and season with salt and pepper.
- Bake for 15 minutes.
- In a large saucepan over moderate heat, fry onions, garlic and spring onion until glossy.
- Thinly slice the Russians and add to the saucepan. Mix through and fry for 5 minutes.
- Add flour and stir.
- Add cream and milk. Stir until sauce is smooth then lower heat
- Add the crispy potatoes to the sauce then transfer to a baking dish.
- Sprinkle cheese on top and bake for 5 minutes.
