Cut the boiled eggs in half and, serve it with the crispy bacon on the spicy avo as a quick, healthy but comforting breakfast.
Spicy Avo and Crispy Bacon Breakfast Bowl
Ingredients
- 200g Eskort Streaky Bacon
- 4 avos
- 4 soft boiled eggs
- ½ t chili flakes
- ½ t cayenne pepper
- 1 t paprika
- 1 lemon
- Salt and pepper
For the Boiled eggs
- 4 eggs
- 1 t bicarb
- 1 t salt
- 1 t vinegar
Method
- Add the eggs, bicarb, salt, and vinegar to a pot of cold water making sure the eggs are completely submerged. Add the pot to high heat and allow the water to boil.
- Let the eggs to cook for 7 minutes.
- Place the eggs in a bowl of ice water to cool down for roughly 1 minute.
- Place the streaky bacon in a cold frying pan and allow to heat over a high heat. Fry the bacon on both sides until crispy.
- Mash the avo, chili flakes, cayenne, paprika and lemons in a bowl and season with salt and pepper.
