Serve the frikkadels on Basmati rice and top with toasted sesame seeds and wilted spring onion.
Sweet & Sour Meatballs with Sticky Basmati Rice
- 350g Eskort Mini Frikkadels
- 1 ginger root, peeled and finely sliced
- 1 clove garlic, chopped
- 1 red chilli, chopped
- 60 ml (¼ C) sweet chilli sauce
- 60 ml (¼ C) orange juice
- 30 ml (2 T) brown sugar
- 1 L (4 C) cooked basmati rice (don’t rinse the rice)
- 60 ml (¼ C) toasted sesame seeds
- 1 bunch spring onion
- salt and pepper
- 45 ml (3 T) coconut oil
- In a frying pan over moderate heat, fry chilli and garlic in coconut oil for half a minute.
- Add ginger, sweet chilli sauce, orange juice and brown sugar. Simmer for 1 minute.
- Season to taste and add frikkadels. Cook for 7 minutes.
- Place spring onions In a large bowl and cover with boiling water.
