Sweet Vanilla Porridge with Streaky Bacon & Caramelised Bananas

  • 200g Eskort Rindless Streaky Bacon
  • 500ml (2 cups) maize meal
  • 5L (6 cups) water
  • 5ml (1 tsp) salt
  • 5ml (1 tsp) vanilla essence
  • 15ml (1 tbsp) butter
  • 250ml (1 cup) castor sugar
  • 3 bananas

  • Substitutions
  • Butter (lactose): Use ghee (clarified butter).


  • Streaky Bacon
  • Preheat the oven to 190°C.
  • Place the streaky bacon on a greased baking tray and bake for 15 minutes until crispy.
  • Vanilla Porridge
  • Bring water to the boil and add salt, vanilla essence and butter.
  • Whisk the maize meal into the water, then lower the temperature and cook for 5
  • In a small bowl, mash 1 banana and whisk it into the maize porrid
  • Add half the castor sugar and mix well. Remove from the heat.
  • Caramelised Bananas
  • Add the rest of the castor sugar to a pan set over high heat.
  • Slice the 2 remaining bananas in half lengthwise.
  • Place the bananas in the castor sugar cut-side down and allow to caramelis


Serve a portion of porridge with extra butter, a caramelised banana slice and a few rashers of streaky bacon.
