Ingredients

  • 375g Eskort Peppadew® Pepper & Feta Pork Sausages
  • 200g vine or cherry tomatoes
  • 125 ml (½ C) red onions, chopped
  • 15 ml (1 T) thyme
  • 30 ml (2 T) cooking oil
  • Batter
  • 560 ml (2¼ C) flour
  • 3 ml (½ t) salt
  • 2 eggs
  • 187 ml (¾ C) milk

Method

  • Preheat oven to 200°C.
  • Place sausages, tomatoes, onions, thyme and oil in an oven dish and bake for 15 minutes.
  • While the sausages are in the oven, combine flour and salt in a mixing bowl and make a well in the middle.
  • Break eggs into the well and mix with an electric mixer until smooth.
  • Add milk and mix well.
  • Pour the batter over the cooked sausages and bake for another 20 minutes

Serve

Serve with a fresh salad and smooth cheese.
