Zesty Dinner Wraps with Za’atar Frikkadel Soup

Ingredients
350 g Eskort Mini Frikkadels
1 onion, chopped
2 garlic cloves, chopped
45 ml (3 tbsp) fresh sage, chopped
10 ml (2 tsp) Za’atar spice
45 ml (3 tbsp) vegetable stock
1 L (4 cups) water
2 handfuls baby spinach
5 ml (1 tsp) salt and pepper
60 ml (¼ cup) butter, melted
Zest from one lemon
45 ml (3 tbsp) olive oil, for cooking
4 large wraps
Allergens:
This recipe contains wheat (gluten), soya (soy) and dairy (lactose).
Substitutions:
Eskort Mini Frikkadels (soy): Remove the filling from Eskort Gold Medal Pork Sausages and shape into meatballs.
Wraps (gluten): Use gluten-free wraps.
Butter (lactose): Use ghee (clarified butter) or coconut oil.
Method
Za’atar Frikkadel Soup
Heat the olive oil in a large saucepan.
Fry the onion, garlic, sage and za’atar spice until the onions are glossy.
Add the mini frikkadels and fry for a further five minutes.
Pour in water and vegetable stock, and allow to simmer for ten minutes.
Zesty Dinner Wraps
Heat a frying pan over moderate heat.
Brush the wraps with melted butter and fry until golden.
Add the lemon zest to the wrap after frying.
Serve
Serve with fresh baby spinach and season with salt and pepper.
