Serve with fresh baby spinach and season with salt and pepper.
Zesty Dinner Wraps with Za’atar Frikkadel Soup
Ingredients
- 350 g Eskort Mini Frikkadels
- 1 onion, chopped
- 2 garlic cloves, chopped
- 45 ml (3 tbsp) fresh sage, chopped
- 10 ml (2 tsp) Za’atar spice
- 45 ml (3 tbsp) vegetable stock
- 1 L (4 cups) water
- 2 handfuls baby spinach
- 5 ml (1 tsp) salt and pepper
- 60 ml (¼ cup) butter, melted
- Zest from one lemon
- 45 ml (3 tbsp) olive oil, for cooking
- 4 large wraps
- Allergens:
- This recipe contains wheat (gluten), soya (soy) and dairy (lactose).
- Substitutions:
- Eskort Mini Frikkadels (soy): Remove the filling from Eskort Gold Medal Pork Sausages and shape into meatballs.
- Wraps (gluten): Use gluten-free wraps.
- Butter (lactose): Use ghee (clarified butter) or coconut oil.
Method
- Za’atar Frikkadel Soup
- Heat the olive oil in a large saucepan.
- Fry the onion, garlic, sage and za’atar spice until the onions are glossy.
- Add the mini frikkadels and fry for a further five minutes.
- Pour in water and vegetable stock, and allow to simmer for ten minutes.
- Zesty Dinner Wraps
- Heat a frying pan over moderate heat.
- Brush the wraps with melted butter and fry until golden.
- Add the lemon zest to the wrap after frying.
