Zesty Dinner Wraps with Za’atar Frikkadel Soup

  • 350 g Eskort Mini Frikkadels
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 45 ml (3 tbsp) fresh sage, chopped
  • 10 ml (2 tsp) Za’atar spice
  • 45 ml (3 tbsp) vegetable stock
  • 1 L (4 cups) water
  • 2 handfuls baby spinach
  • 5 ml (1 tsp) salt and pepper
  • 60 ml (¼ cup) butter, melted
  • Zest from one lemon
  • 45 ml (3 tbsp) olive oil, for cooking
  • 4 large wraps

  • This recipe contains wheat (gluten), soya (soy) and dairy (lactose).
  • Substitutions:
  • Eskort Mini Frikkadels (soy): Remove the filling from Eskort Gold Medal Pork Sausages and shape into meatballs.
  • Wraps (gluten): Use gluten-free wraps.
  • Butter (lactose): Use ghee (clarified butter) or coconut oil.


  • Za’atar Frikkadel Soup
  • Heat the olive oil in a large saucepan.
  • Fry the onion, garlic, sage and za’atar spice until the onions are glossy.
  • Add the mini frikkadels and fry for a further five minutes.
  • Pour in water and vegetable stock, and allow to simmer for ten minutes.
  • Zesty Dinner Wraps
  • Heat a frying pan over moderate heat.
  • Brush the wraps with melted butter and fry until golden.
  • Add the lemon zest to the wrap after frying.


Serve with fresh baby spinach and season with salt and pepper.
