Curry Beans On Toast With Pork Sausage

Ingredients:

  • Eskort Gold medal Pork Sausages 
  • 1 tin baked beans 
  • 1 onion chopped
  • 3 T yellow curry paste 
  • 4 sliced crusty bread 
  • 4-8 eggs scrambled 
  • 3 T oil for frying the onion 
  • 1 t salt to taste
  • 2 C water 
  • 3 t oil for the sausages

Method

  • Place the pork sausages in a pan of hot water with the 3 T oil and cook it until the water evaporates and the pork sausages are fried in the oil until golden. Takes about 10 min. 
  • Place another frying pan over a moderate heat and add the onion with the curry paste. 
  • Add the baked beans and stir well. 
  • Toast your bread in a toaster or in a pan. 
  • Season the beans with the salt.

 

Serve:

  • Serve the beans on the toast with the sausages and the scrambled eggs. 
  • Garnish with chopped chives.
