Alfredo Pasta Rice with Streaky Bacon

Ingredients
200g Eskort Rindless Streaky Bacon, sliced into squares
500 ml (2 C) pasta rice
125 ml (½ C) leeks, chopped
45 ml (3 T) thyme, chopped
750 ml (3 C) mushrooms, chopped
1 clove garlic, chopped
500 ml (2 C) vegetable stock
500 ml (2 C) water
250 ml (1 C) cream
125 ml (½ C) Parmesan cheese, grated
salt and pepper
olive oil for cooking
Method
In a frying pan over moderate heat, fry bacon, thyme, mushrooms and garlic in olive oil until bacon is golden brown.
Add pasta rice and fry for 1 minute.
Add stock, water and cream. Stir through and allow to simmer for 10 minutes.
Serve
Serve topped with grated Parmesan cheese and extra crispy streaky bacon, if desired.
