If you do not have access to a gas stove top, follow the same instructions using a weber or braai over hot coals.
BBQ Ribs with Sweet & Sour Onion Rings
Ingredients
- BBQ Ribs
- 2 kg Eskort BBQ Marinated Ribs
- Onion Rings
- 3 large red onions, sliced into rings
- 15 ml (1 T) salt
- 750 ml (3 C) flour
- 30 ml (2 T) BBQ spice
- oil, for deep frying
- Sweet & Sour Sauce:
- 125 ml (½ C) pineapple juice
- 125 ml (½ C) light brown sugar
- 15 ml (1 T) tomato sauce
- 30 ml (2 T) sweet chilli sauce
- 5 ml (1 t) red wine vinegar

Method
- BBQ Ribs
- Braai the ribs for 15 minutes on each side, turning every 5 minutes. Do not burn.
- Onion Rings
- Season onions with salt and leave to sit for 10 minutes.
- Coat the onions with 2 cups of flour and BBQ spice. Leave to sit again while the oil heats.
- Fry the coated onions in a generous amount of oil in a deep pan over a gas flame until golden and crispy.
- Sweet & Sour Sauce
- Stir all the remaining ingredients together in a saucepan over a gas flame until the sugar dissolves.
- Bring to the boil, then remove from the heat.
- Dress the onion rings with the sauce and serve alongside the ribs.
