
Eskort BBQ Cocktail Ribs

Ingredients
- 2Tbsp Avocado oil
- ΒΌ cup sorghum
- 1tsp cumin seeds
- 1 stalk fresh curry leaves
- Fine salt
Method
Cook ribs according to the instructions.
- In a wide pot with a lid, add in enough avocado oil to coat the base of the pan in a moderate slick of oil.
- When the oil is hot to the palm, throw in the cumin seeds, curry leaves, followed by the sorghum.
- Allow to pop before tossing through with some fine salt.
- Pour the sorghum popcorn into a pestle and mortar and grind roughly into even sized pieces before dipping each rib into the sorghum
