Lemon and Herb Chops with Baby Potatoes.
Ingredients:
- 4 Eskort Loin Chops
- 1 ½ C mixed herbs chopped
- Juice from 10 a lemon
- 1 T butter
- 1 kg baby potatoes cut in half and pre cooked
- 2 t coarse salt
- 3 T lemon flavored olive oil
Method
- Heat a frying pan over a high heat.
- Season he chops with your lemon oil and salt.
- Coat the chops in the chopped herbs and fry them in the pan on both sides for 5-7 min.
- Add the butter and the lemon juice to the pan and remove the pan from the heat.
Serve:
- Serve the chops with the baby potatoes and pour the pan juices over the baby potatoes.
- Add and garnish with some more chopped herbs.
