Serve broth and noodles in a bowl and top with charred cabbage.
Spicy Sweet Onion & Bacon Broth with Noodles
Ingredients
- 200 g Eskort Diced Bacon
- 2 red onions
- 5 ml (1 t) red curry paste
- 2 mini cabbages, quartered
- 200 g egg noodles
- salt and pepper to taste
- 750 ml (3 C) pork broth
- coconut oil for cooking
- 30 ml (2 T) brown sugar
- 15 ml (1 T) apple vinegar
Method
- In a pot over moderate heat, fry onions in coconut oil until soft and sweet.
- Add the bacon and fry until crispy.
- Add curry paste and the broth to the pot.
- Add the noodles and simmer for 2 minutes.
- Char the cabbage with the brown sugar and then add the vinegar.
