Spicy Sweet Onion & Bacon Broth with Noodles

Ingredients
200 g Eskort Diced Bacon
2 red onions
5 ml (1 t) red curry paste
2 mini cabbages, quartered
200 g egg noodles
salt and pepper to taste
750 ml (3 C)
pork broth
coconut oil for cooking
30 ml (2 T) brown sugar
15 ml (1 T) apple vinegar
Method
In a pot over moderate heat, fry onions in coconut oil until soft and sweet.
Add the bacon and fry until crispy.
Add curry paste and the broth to the pot.
Add the noodles and simmer for 2 minutes.
Char the cabbage with the brown sugar and then add the vinegar.
Serve
Serve broth and noodles in a bowl and top with charred cabbage.
