Ingredients

  • 200 g Eskort Diced Bacon
  • 2 red onions
  • 5 ml (1 t) red curry paste
  • 2 mini cabbages, quartered
  • 200 g egg noodles
  • salt and pepper to taste
  • 750 ml (3 C) pork broth
  • coconut oil for cooking
  • 30 ml (2 T) brown sugar
  • 15 ml (1 T) apple vinegar

Method

  • In a pot over moderate heat, fry onions in coconut oil until soft and sweet.
  • Add the bacon and fry until crispy.
  • Add curry paste and the broth to the pot.
  • Add the noodles and simmer for 2 minutes.
  • Char the cabbage with the brown sugar and then add the vinegar.

Serve

Serve broth and noodles in a bowl and top with charred cabbage.
