Curried Bacon & Eggs on Creamy Porridge

Ingredients
200g Eskort Diced Bacon
1L (4 C) cooked soft porridge
15 ml (1 T) garlic, chopped
15 ml (1 T) curry powder
60 ml (¼ C) sesame seeds
60 ml (¼ C) pumpkin seeds
60 ml (¼ C) coconut
60 ml (¼ C) butter
4 eggs
olive oil for cooking
salt & pepper to taste
Method
For the porridge, heat a pot of water over a High heat.
Whisk in the maize meal and lower the heat.
Add the butter and whisk it into the soft porridge.
Heat a frying pan over a moderate heat and add the olive oil
Fry the Diced Bacon until crispy then lower heat.
Add curry powder, seeds, coconut and garlic and fry for 2 minutes.
Fry the eggs sunny side up in a separate pan.
Stir butter through the porridge and serve.
Serve
Serve porridge hot and top with curried bacon and eggs.
