Ingredients
Chips
4 large potatoes
salt to taste
oil for deep frying
Spiced Russians
500 g Eskort Cheese Russians, chopped
2 red peppers, chopped
1 clove garlic, chopped
30 ml (2 T) thyme, chopped
5 ml (1 t) smoked paprika
5 ml (1 t) chilli flakes
15 ml (1 T) balsamic vinegar
45 ml (3 T) olive oil for cooking
salt and pepper to taste
Method
Chips
Add salt to a pot of water and bring to the boil.
Quarter potatoes, add them to the boiling water and cook until al dente.
Remove from the heat and refrigerate potatoes to cool.
Press potatoes flat and deep fry until crispy.
Season with salt and pepper.
Spiced Russians
Add olive oil to a pan over moderate heat and fry red peppers, garlic, thyme, paprika and chilli flakes until soft and glossy.
Add Russians and fry until cooked (approx. 5 minutes each side).
Add the balsamic vinegar and season to taste.
Serve
Serve the spicy Russians on the potatoes and garnish with freshly shaved white cheese and herbs.
