Low GI Ham, Berry, Cherry Tomato and Cheese Toasties
Ingredients
- Low GI bread: (makes two loaves)
- 500 g oats
- 500 g White bread flour
- 5 ml salt
- 20 ml baking powder
- 250 g butter
- 500 ml buttermilk
- 375 g soft soaked dates
- 4 eggs
- 75 g macadamia nuts
- 75 g pecan nuts
- 60 g sunflower seeds
- 60 g poppy seeds
- Sandwich:
- 8 slices Eskort Double Smoked Ham
- 75 g seasonal fresh berries
- 180 g cherry tomatoes
- salt and pepper
- 125 ml white cheddar, grated
- 125 ml Parmesan cheese, grated
- 45 ml butter
- 30 ml olive oil
Method
- Low GI bread: (makes two loaves)
- Preheat the oven to 180°C.
- Line two bread tins with baking paper and spray with spray n cook.
- Place the oats into a food processor and pulse until fine.
- In a large mixing bowl combine all the dry ingredients.
- Add the nuts and seeds to the flour mixture.
- Add butter, buttermilk and dates to a small saucepan and melt the butter and leave to cool.
- Add the eggs to the butter mixture and mix well.
- Add the butter mixture to the dry ingredients and mix well.
- Fill each bread pan halfway with the dough.
- Bake for 45 – 60 minutes.
- Sandwich:
- In a small saucepan over medium heat, fry the cherry tomatoes in olive oil until the skins burst. Season with salt and pepper.
- Add the berries and simmer for three minutes until a jam forms and remove from heat.
- Slice 8 slices of your Lo GI seed loaf. Top one slice of bread with the tomato and berry jam.
- Add the two slices of ham and the cheeses, place under the grill until the cheese melts
