Ingredients
375 g Eskort Jalapeño Pork Sausages
1 kg baby potatoes, halved
250 ml leeks, chopped
3 peaches, quartered
125 ml olive oil
45 ml whole grain mustard
salt and pepper to taste
salad greens
Method
Preheat the oven to 190°C.
Line a deep-dish oven pan with baking paper and add the sausages, baby potatoes, peaches and leeks.
In a small jug, combine the olive oil and mustard and season with salt and pepper.
Pour the sauce over the sausages and potatoes and mix well to coat everything.
Bake in the oven for 35 minutes.
Serve
Serve with fresh salad greens.
