• Fill the pittas with 1tbsp of yoghurt, add the rocket and some of the red salad.
Add the BBQ Frikkadels and avocado and serve.
BBQ Mini Frikkadels with Red Salad in a Low GI Pita
Ingredients
- Eskort BBQ Frikkadels
- 100g roasted beetroot
- 1 red onion thinly sliced
- 2 hands wild rocket
- 1 avo thinly sliced
- ¼ C yoghurt
- 1 t vinegar
- 1 garlic clove chopped
- 4 Low GI pitas cut in half
- Salt and pepper to taste
- 3 T avo oil
Method
- Preheat the air fryer to 180°.
- Place the frikkadels in their bag, in the microwave for 2 minutes.
- Line the air fryer with foil and llace the frikkadels on top of the foil and air fry for 10 minutes.
- Add the beetroot, red onion, vinegar and garlic to a mixing bowl and season with salt and pepper.
- Dress the avocado with the vinegar and season with salt and pepper.
- Toast the pita breads with the avocado oil in a frying pan for 30 sec on each side or keep them untoasted.
- Remove the frikkadels from the air fryer.
