Pork Sausage and Potato Bake

Ingredients

  • 375g Eskort pork sausages, frozen
  • 6 potatoes, peeled, cubed, and boiled until tender
  • Small handful fresh sage leaves, chopped
  • Salt, to taste
  • 1 1/2 cups fresh cream, whisked to combine with 2 eggs and salt to taste
  • 150g grated cheddar cheese

Method

  1. Preheat your oven to 180°C.
  2. Place the 375g frozen pork sausages in a greased baking dish and bake for 10 – 15 minutes. Remove the sausages from the baking dish once cooked before adding the other ingredients to the dish.
  3. Scatter the boiled potato cubes evenly into the dish.
  4. Sprinkle the chopped sage leaves over the potatoes, then season with salt to taste.
  5. Add the pork sausages back to the dish on top of the potatoes.
  6. Pour the whisked cream and egg mixture over the potatoes and sausage.
  7. Sprinkle with 150g grated cheddar cheese, spreading it out to cover the surface.
  8. Bake in the preheated oven for 30 minutes, or until the sausages are golden brown and the egg mixture is set and golden brown.
  9. Serve hot.
