Pork Sausage and Potato Bake
Ingredients
- 375g Eskort pork sausages, frozen
- 6 potatoes, peeled, cubed, and boiled until tender
- Small handful fresh sage leaves, chopped
- Salt, to taste
- 1 1/2 cups fresh cream, whisked to combine with 2 eggs and salt to taste
- 150g grated cheddar cheese
Method
- Preheat your oven to 180°C.
- Place the 375g frozen pork sausages in a greased baking dish and bake for 10 – 15 minutes. Remove the sausages from the baking dish once cooked before adding the other ingredients to the dish.
- Scatter the boiled potato cubes evenly into the dish.
- Sprinkle the chopped sage leaves over the potatoes, then season with salt to taste.
- Add the pork sausages back to the dish on top of the potatoes.
- Pour the whisked cream and egg mixture over the potatoes and sausage.
- Sprinkle with 150g grated cheddar cheese, spreading it out to cover the surface.
- Bake in the preheated oven for 30 minutes, or until the sausages are golden brown and the egg mixture is set and golden brown.
- Serve hot.
