Bacon And Tomato Sheet Pan Gnocchi
Ingredients
- 600g baby tomatoes, halved
- 2 garlic cloves, peeled and halved
- 1 pack Eskort Diced Bacon
- 500g gnocchi
- Drizzle of olive oil
- Salt and black pepper, to taste
- 250ml fresh cream
- Basil pesto
- Fresh basil leaves, to top
Method
- Preheat your oven to 180°C.
- To a large roasting or casserole dish, add the baby tomatoes, garlic cloves, bacon, gnocchi, olive oil, seasoning and cream. Stir well to combine.
- Roast in the preheated oven for 30 minutes, stirring once or twice over this time.
- To serve, top with dollops of basil pesto and fresh basil and serve immediately
