Viral Italian Sushi
Ingredients
- 125g Eskort Pork Pastrami
- 150g bocconcini mozzarella balls
- ±7 marinated sun-dried tomatoes
- 1 handful fresh rocket
- 1 small handful fresh basil leaves
- Salt and black pepper, to taste
- Drizzle of balsamic reduction
Method
- On a clean surface or piece of cling film, lay out the pork pastrami slices slightly overlapping to form a rectangular sheet.
- Tear the bocconcini into smaller pieces and arrange them in a line across the centre of the pastrami sheet.
- Add the sun-dried tomatoes, rocket, and basil leaves on top of the cheese.
- Season with salt and black pepper to taste.
- Carefully roll up the pastrami sheet, sushi-style, using the cling film to help keep it tight.
- Slice into bite-sized rounds and drizzle with balsamic reduction just before serving.
