Ingredients

  • 1 pack Eskort Back Bacon
  • 6 croissants
  • Butter, to spread
  • 3 eggs
  • 60ml fresh cream
  • Small handful chopped fresh rosemary
  • Salt and black pepper, to taste
  • 150g cheese slices of your choice
  • Rosemary sprigs, to top

Method

  1. Preheat your oven to 160°C.
  2. Fry the bacon in a pan over medium heat until crispy, then cut the bacon into strips.
  3. Slice the croissants into thirds and butter each slice.
  4. Add the eggs, cream, rosemary and salt and pepper to a bowl and whisk until combined. Dip each croissant piece into the egg mixture before arranging the croissant pieces in a roasting dish.
  5. Add the crispy bacon pieces and slices of cheese to the dish with the croissants, then top with rosemary sprigs.
  6. Roast in the preheated oven until the egg is set, the cheese is melted and the croissants are toasted. Serve immediately.
