Bacon, Banana and Brie with Whisky and Cumin Onion Marmalade

  • Sandwich:
  • 8 Banana bread slices – Your favourite store bought Banana Bread
  • 400g Eskort Back Bacon
  • 200g Black Brie cheese or Brie Cheese of your choice
  • 60 ml butter
  • Fresh rocket22
  • Onion marmalade:
  • 2 onions, sliced thinly
  • 45 ml olive oil
  • 30 ml ground cumin
  • 60 ml whisky
  • 125 ml brown sugar
  • 5 ml vanilla essence
  • 5 ml salt
  • 15 ml vinegar


  • Onion marmalade:
  • Heat a saucepan over a medium heat.
  • Add the olive oil and onions and fry until the onions are golden and soft.
  • Add the remainder of the ingredients and reduce the heat.
  • Simmer for 10-15 min.
  • Sandwich:
  • In a frying pan over a high heat, fry the bacon until crispy.
  • Layer the bacon and sliced brie on the banana bread and add the onion marmalade.
  • Sandwich together with the remaining bread slice.
  • In a large pan melt some butter in a frying pan and toast the sandwiches until the brie has melted.
  • Serve with some rocket and extra onion marmalade
