Bacon, Cheese & Jalapeño Muffins
Ingredients:
- 2 cups of Cake flour
- 1 1/3 cup of milk
- 1 large egg, beaten
- 1/3 cup unsalted butter, melted
- 1 cup of diced bacon, cooked
- 2 jalapeno’s, deseeded and diced
- 1⁄2 cup white cheddar cheese, grated 1⁄2 tsp Garlic powder
- 2 tsp baking powder
- 1⁄2 tsp dried origanum
- Pinch of salt
- Freshly ground black pepper
Method:
- Preheat oven to 180 degrees and spray or grease a muffin tray
- In a bowl add the beaten egg, milk, butter and spices and mix.
- Then add the cheese, jalapenos and bacon and mix.
- Fold in the flour gently until just combined ensuring not to over mix so that we still get tender
- Soft muffins and not rocks!
- Fill the muffin pan with the mixture and bake in a preheated oven for 15 to 20 mins.
