Ingredients

  • 300g farfalle / bowtie pasta
  • 200g cherry tomatoes, quartered
  • 1 pack diced bacon
  • Handful Italian parsley
  • Bunch / large handful of butter lettuce
  • 1 – 2 tbsp Eskort creamy mayo
  • Juice of 1 lemon
  • Salt & pepper

Method

  • Cook the pasta according to pack instructions, allow time to cool.

  • Pan fry the bacon

  • Fine chop the parsley

  • Quarter tomatoes and shred or tear the lettuce

  • Mix the mayo with juice of the lemon.

  • Toss everything together

Serve

  • Add some salt and pepper to taste.​
