Ingredients
500g Eskort Minced Bacon
375ml (1½ cups) cake flour
5ml (1 tsp) baking powder
5ml (½ tsp) salt
5ml (1 tsp) vanilla essence
125ml (½ cup) treacle sugar
90ml (6 tbsp) white sugar
125ml (½ cup) butter
1 egg
750ml (3 cup) popcorn, popped
250ml (1 cup) white chocolate, chopped

This recipe contains wheat (gluten) and dairy (lactose).
Substitutions
Cake Flour (gluten): Use gluten-free cake flour.
Butter (lactose): Use ghee (clarified butter).
White Chocolate (lactose): Use vegan white chocolate.
Method
Preheat the oven to 180°
Fry the minced bacon in a pan over moderate heat until crispy, then set aside to cool.
Add the butter, treacle sugar, white sugar and egg into a mixer.
Mix until well-combined and light in colour.
Add the dry ingredients and mix until a ball of dough forms.
Add the popcorn, crispy bacon and white chocolate and mix well.
Shape the dough into small balls and press flat onto a greased baking tray to form cookies.
