Cheese Griller & Fennel Salad with Cumin & Chilli mayo

  • Cheese grillers and Fennel:
  • 500 g Eskort Cheese Grillers
  • 2 fennel bulbs, thinly sliced
  • 30 ml olive oil
  • 5 ml pepper
  • juice from half a lemon
  • Salad and dressing:
  • 4 handfuls baby spinach
  • 1 handful fresh mint leaves
  • ½ cucumber, cut into ribbons
  • 10 ml ground cumin
  • 1 small red chili, chopped
  • 125 ml mayonnaise
  • 45 ml olive oil
  • 45 ml lime juice


  • Cheese grillers and Fennel:
  • Preheat a frying pan on a high heat.
  • In a frying pan, heat olive oil, add cheese grillers and fennel and fry on high heat until the fennel is golden.
  • Season with pepper and lemon juice.
  • Salad and dressing:
  • Mix ground cumin, chili and mayonnaise in a small bowl.
  • Add baby spinach, mint and cucumber to a large bowl and dress with olive oil and lime juice.


Add the cheese grillers and fennel and drizzle with the chili mayo.
