Cheese Griller & Fennel Salad with Cumin & Chilli mayo

Ingredients
Cheese grillers and Fennel:
500 g Eskort Cheese Grillers
2 fennel bulbs, thinly sliced
30 ml olive oil
5 ml pepper
juice from half a lemon
Salad and dressing:
4 handfuls baby spinach
1 handful fresh mint leaves
½ cucumber, cut into ribbons
10 ml ground cumin
1 small red chili, chopped
125 ml mayonnaise
45 ml olive oil
45 ml lime juice
Method
Cheese grillers and Fennel:
Preheat a frying pan on a high heat.
In a frying pan, heat olive oil, add cheese grillers and fennel and fry on high heat until the fennel is golden.
Season with pepper and lemon juice.
Salad and dressing:
Mix ground cumin, chili and mayonnaise in a small bowl.
Add baby spinach, mint and cucumber to a large bowl and dress with olive oil and lime juice.
Serve
Add the cheese grillers and fennel and drizzle with the chili mayo.
