Cheesy Bacon & Butternut Bake

  • 200g Eskort Streaky bacon
  • 2 large butternuts
  • 250 ml (1 C) cream cheese
  • 250 ml (1 C) mozzarella cheese, grated
  • 250 ml (1 C) soft feta
  • 2 red onions, quartered
  • 60 ml (¼ C) red pepper pesto
  • 60 ml (¼ C) sundried tomato pesto
  • oil for cooking
  • salt and pepper to taste
  • 4 sprigs fresh thyme


  • Preheat oven to 190°C.
  • Slice butternuts in half lengthwise and remove seeds.
  • Place butternuts open side up on a greased baking tray and fill with bacon and onion.
  • Drizzle with olive oil, season with salt and pepper and place thyme on top. Bake for 15 minutes.
  • In a mixing bowl, combine cream cheese, mozzarella and feta.
  • Spoon cheese mix on top of the baked butternuts.
  • Put butternuts back into the oven to grill for 7 minutes.


Serve butternut with red pepper and/or sundried tomato pesto.
