Cheesy Bacon Corn Dogs
Ingredients:
- 500g Eskort Streaky Bacon
- 250 g Mozzarella cheese cut into 3cm cubes
- 250g Cheddar cheese cut into 3cm cubes
- ½ C eskort Braai Spice
- 2 C flour
- 2 C butter milk
- Oil for deep frying
Ingredients Serving:
- ¼ C Sriracha sauce
- 1 C mayonnaise
- Zest and juice from one lemon
- 1 C mixed herbs chopped
Method
- Heat your oil in a large pot over a high heat.
- Start by putting the one end of the streaky bacon on the skewer.
- Add a block of mozzarella and fold the bacon back over the skewer and mozzarella.
- Do the same with the cheddar until you get to four cubes of cheese on one skewer.
- Combine the Braai spice with the flour.
- Dip the skewers into the flour then the buttermilk and back into the flour.
- Do this with all your skewers.
- Fry the bacon “dogs” until golden.
- Remove from the oil and drain the oil on some kitchen towel.
Serve:
- Swirl the sriracha sauce into the mayo with the lemon juice and the zest.
- Serve the mayo on the bacon “Dogs” and serve with the sauce and herbs.
