  • Belly rind 
  • ½ C coarse salt

Method

  • Preheat the oven to 220°C. 
  • Place the rind on a baking tray with baking paper and cover the rind with the salt.
  • Bake for 1h.

Serve

Wipe the salt from the rind before serving it.
  • Serve the bacon with a lemon mayo or something spicy.
