Ingredients

  • Thinly sliced Eskort Picnic ham
  • Leftover pork loin roast
  • 4 seeded buns
  • ½ C sweet mustard
  • 1 C gherkins thinly sliced
  • ¼ C red pepper pesto
  • 1 C butter lettuce
  • 1 C fresh rocket
  • 1 C caramelised onions

Method

  • Place the butter lettuce and rocket into a bowl and add the red pepper pesto.
  • Mix well to coat all the leaves with the pesto.
  • Cut open the seeded buns and add sweet mustard on both sides.
  • Add the dressed lettuce.
  • Add the slices of loin roast, gherkins, thinly sliced ham and the caramelised onion.

Serve

  • Wrap these individually with baking or wax paper.
  • Tip: make sure that the piece of wrapping paper is big enough to use as a plate while eating in the car so there is no mess. That is if you make it to the car.
