Ingredients
Fried Calamari and Crispy Bacon
400 g Eskort Streaky Bacon
1 kg calamari tubes
45 ml (3 T) olive oil
olive oil, for frying
Lemon-Butter Sauce
45 ml (3 T) olive oil
60 ml (¼ C) butter, melted
60 ml (¼ C) lemon juice
15 ml (1 T) black pepper
15 ml (1 T) cayenne pepper
2 cloves garlic
salt, to taste
Allergens:
This recipe contains dairy (lactose).
Substitutions:
Butter (lactose): Use ghee (clarified butter).
Method
Lemon-Butter Sauce
Pulse all ingredients in a food processor until well combined and set aside.
Fried Calamari and Crispy Bacon
In a large frying pan over moderate heat, fry bacon until crispy then remove from the pan.
Turn the heat up to high, coat calamari tubes in olive oil and flash fry in the hot pan.
Turn the heat down, pour in the sauce and shake well to coat the calamari.
Remove from heat and mix in the crispy bacon.
Serve
Serve with a side of crusty bread.
