Hot Sesame Seed Meatballs with Noodles

  • 375 g Eskort Gold Medal Mini Pork Sausages
  • 4 packets 2 Minute Noodles
  • 1 green chilli, chopped
  • 125 ml (½ C) spring onion, chopped
  • 250 ml (1 C) vegetable stock
  • juice and zest of 1 lime
  • 250 ml (1 C) mint leaves
  • 45 ml (3 T) sesame seeds
  • 45 ml (3 T) coconut oil
  • salt to taste


  • Place noodles in a large bowl and cover with boiling water. Set aside to cook.
  • In a frying pan over moderate heat, fry chilli and spring onion in coconut oil for 1 minute.
  • Remove sausage meat from the casings and roll into small balls.
  • Cover meatballs with sesame seeds, add to a frying pan and fry until golden.
  • Add vegetable stock and noodles. Simmer for a minute.
  • Season with salt, add lime zest and lime juice and remove from heat.


Serve with mint and more chilli, if desired.
