Jalapeño Pork Sausage Wrap

Ingredients
4 Eskort Jalapeño Pork Sausages
125 ml (½ C) frozen corn
125 ml (½ C) cream cheese
5 ml (½ t) harissa paste (or any hot sauce)
4 large butter lettuce leaves
30 ml (2 T) onion marmalade
60 ml (¼ C) mayonnaise
zest and juice of 1 lime
2 wraps
Method
Remove pork sausage meat from sausage casing.
Press sausage meat into oval patties and fry in a pan over moderate heat until golden.
Mix the corn, cream cheese and harissa paste together.
Mix lime zest and juice into the mayonnaise.
Serve
Pack everything in separate containers if taking to work and assemble your wrap at lunchtime.
