Ingredients

  • Low GI bread: (makes two loaves)
  • 500 g oats
  • 500 g White bread flour
  • 5 ml salt
  • 20 ml baking powder
  • 250 g butter
  • 500 ml buttermilk
  • 375 g soft soaked dates
  • 4 eggs
  • 75 g macadamia nuts
  • 75 g pecan nuts
  • 60 g sunflower seeds
  • 60 g poppy seeds
  • Sandwich:
  • 8 slices Eskort Double Smoked Ham
  • 75 g seasonal fresh berries
  • 180 g cherry tomatoes
  • salt and pepper
  • 125 ml white cheddar, grated
  • 125 ml Parmesan cheese, grated
  • 45 ml butter
  • 30 ml olive oil

Method

  • Low GI bread: (makes two loaves)
  • Preheat the oven to 180°C.
  • Line two bread tins with baking paper and spray with spray n cook.
  • Place the oats into a food processor and pulse until fine.
  • In a large mixing bowl combine all the dry ingredients.
  • Add the nuts and seeds to the flour mixture.
  • Add butter, buttermilk and dates to a small saucepan and melt the butter and leave to cool.
  • Add the eggs to the butter mixture and mix well.
  • Add the butter mixture to the dry ingredients and mix well.
  • Fill each bread pan halfway with the dough.
  • Bake for 45 – 60 minutes.
  • Sandwich:
  • In a small saucepan over medium heat, fry the cherry tomatoes in olive oil until the skins burst. Season with salt and pepper.
  • Add the berries and simmer for three minutes until a jam forms and remove from heat.
  • Slice 8 slices of your Lo GI seed loaf. Top one slice of bread with the tomato and berry jam.
  • Add the two slices of ham and the cheeses, place under the grill until the cheese melts
