Pink Bacon Cupcakes
Ingredients
- 1 box white cake premix
- ½ teaspoon red or pink food colouring
For the Icing:
- 220g cream cheese, at room temperature
- 115g butter, at room temperature
- 360g icing sugar, sieved
- 10ml vanilla essence
- Large pinch of salt
To Top:
- 200g Eskort Streaky Bacon, fried or grilled until crispy
- Honey or golden syrup, for drizzling
Method
- Prepare the cake batter according to the packet instructions. Add the food colouring and mix until evenly pink.
- Place cupcake liners into the wells of a muffin tray. Divide the mixture between cupcake liners and bake as directed on the cake mix packaging. Allow cupcakes to cool completely.
- To make the icing, beat the cream cheese and butter together until smooth and creamy. Gradually add the icing sugar, followed by the vanilla essence and salt, beating until light and fluffy.
- Transfer the icing to a piping bag fitted with a star nozzle and pipe onto the cooled cupcakes.
- Break or cut each bacon streak into three pieces and place into the top of the iced cupcakes.
- Finish with a drizzle of honey or golden syrup before serving.
