Ingredients

  • Pork Chop Noodle Salad
  • Leftover Eskort Pork Chops, thinly sliced
  • 500 ml (2 C) cooked noodles
  • 2 spring onions, chopped
  • 3 handfuls pak choi
  • Zesty Soy Dressing
  • 30 ml (2 T) tomato jam
  • 30 ml (2 T) soya sauce
  • 30 ml (2 T) oyster sauce
  • 5 ml (1 t) sesame oil
  • Zest and juice of 1 lime
  • 5 ml (1 t) sriracha sauce
  • 45 ml (3 T) toasted sesame seeds
  • Allergens
  • This recipe contains wheat (gluten), sesame seeds and soya (soy).
  • Substitutions
  • Soya Sauce (soy): Use coconut aminos.
  • Noodles (gluten): Use rice noodles or any other gluten-free noodle.
  • Sesame seeds: Omit if you have a seed allergy.

Method

  • Spicy Soy Dressing
  • In a small bowl, mix all the dressing ingredients until well combined.
  • Pork Chop Noodle Salad
  • Place the noodles in a large bowl.
  • Pour the dressing over the noodles and toss to coat.

Serve

Serve a portion of dressed noodles topped with pork chop slices, pak choi and chopped spring onion.
