Ingredients:

  • Eskort Pork Rump Steak 
  • 300g taco shells follow the cooking instructions on the package 
  • 2 C leeks chopped 
  • 1 tin butter beans 
  • 1 red onion thinly sliced 
  • 1 C feta 
  • ½ C pickled jalapenos

Method

  • Heat a frying pan over a high heat. 
  • Season the steak with olive oil and salt.
  • Fry the rump for 6 min on each side and 1 min on the fat side. 
  • Allow the rump to rest for 5 min before you slice it. 
  • Heat a frying pan on a moderate heat and fry the leeks with some oil until soft. 
  • Combine the leeks, beans, and red onion in a mixing bowl with the jalapenos

Serve:

  • Fill the taco shells with the veggies and add the sliced rump, the feta and coriander leaves.
