Roasted Red Onion Russian Roll with Lemon Cottage Cheese

  • Russian Roll
  • 500 g Eskort Smoked Russians
  • 4 hot dog rolls
  • 15 ml (1 T) harissa spice
  • 2 red onions, quartered
  • 45 ml (3 T) olive oil
  • zest and juice of 1 lemon
  • 1 clove garlic, chopped
  • 15 ml (1 T) thyme, chopped
  • Lemon Cottage Cheese
  • 250 ml (1 C) smooth cottage cheese
  • zest and juice of 1 lemon
  • black pepper and a pinch of salt


  • Russian Roll
  • Preheat the oven to 190°C.
  • In a mixing bowl, combine harissa spice, onions, olive oil, lemon zest and juice, garlic and thyme.
  • Transfer to a baking tray lined with baking paper and bake for 15 minutes.
  • Fry Russians in the remaining oil in a large pan over moderate heat (approx. 5 minutes each side).
  • Lemon Cottage Cheese
  • Place the ingredients in a mixing bowl and mix until well combined.


Assemble the rolls starting with the Russians, add roasted onions and finish with cottage cheese.
