Spicy Bacon & Ham Cheesy French Toast

  • French Toast
  • 500 g Eskort Mini Picnic Ham
  • 8 slices bread of your choice
  • 3 eggs
  • 60 ml (½ C) milk
  • 500 ml (2 C) cheese, grated
  • 250 ml (1 C) cheese sauce (you can use store-bought)
  • 60 ml (¼ C) olive oil for cooking
  • Spicy Bacon
  • 200 g Eskort Rindless Streaky Bacon
  • 60 ml (¼ C) syrup
  • 45 ml (3 T) chilli flakes


  • Preheat the oven to 190°C.
  • Place the streaky bacon on a greased baking tray and glaze with the syrup and chilli flakes. Bake for 15 minutes.
  • While the bacon is in the oven, preheat the olive oil in a frying pan over moderate heat.
  • Beat the eggs and milk in a dish.
  • Dip the bread slices in the egg mixture.
  • Sear both sides of the bread in the preheated pan
  • Add cheese and ham to 4 of the French toast slices and close with the remaining slices.
  • Place them in an ovenproof dish, top with cheese sauce and bake in the oven for 5 minutes.


Place spicy bacon on top and serve with fresh herbs.
