Ingredients

  • Streaky Bacon, Avo & Brown Rice Salad
  • Eskort Streaky Bacon
  • 1 L (4 C) leftover brown rice
  • 60ml (¼ C) butter
  • 60 ml (¼ C) vegetable stock
  • 125 ml (½ C) chopped leeks
  • 1 avocado, sliced
  • Oil, for frying
  • 1 handful rocket
  • Yoghurt & Herb Dressing
  • 250 ml (1 C) plain yoghurt
  • Zest and juice of 1 lemon
  • 60 ml (¼ C) chopped chives
  • 60 ml (¼ C) Italian parsley
  • 1 clove garlic, chopped
  • Salt and pepper, to taste

  • Substitutions
  • Butter (dairy): Use ghee or coconut oil.
  • Yoghurt (lactose): Use unflavoured coconut yoghurt.

Method

  • Streaky Bacon & Brown Rice Salad
  • Place the bacon in a lightly-oiled, cold frying pan, then raise heat to a moderate
  • Fry the bacon until crispy, then remove from the pan.
  • Add butter to the pan, fry the leeks until glossy and then pour in the vegetable stock.
  • Stir in the rice, then remove from the heat.
  • Yoghurt & Herb Dressing
  • In a mixing bowl, combine all the ingredients.

Serve

Serve a portion of the rice topped with rocket, bacon and avo, and dressing on the side.
