Easy Freezy Muffins
Ingredients
- Batter Ingredients:
- 750 ml (3 C) cake flour
- 10 ml (2 t) baking powder
- 125 ml (½ C) brown sugar
- 5 ml (1 t) salt
- 2 eggs
- 375 ml (1½ C) milk
- 125 ml (½ C) oil
- Flavour Options:
- Bacon Cheese & Sundried Tomato
- 250 ml (1 C) Eskort Diced Bacon, cooked
- 250 ml (1 C) cheese
- 60 ml (¼ C) sundried tomato paste
- Cheesy Ham & Spinach
- 250 ml (1 C) cheese
- 250 ml (1 C) Eskort Mini Picnic Ham, diced
- 125 ml (½ C) wilted spinach
- Sweet Chilli Chicken Vienna
- 250 ml (1 C) Eskort Chicken Viennas, chopped
- 45 ml (3 T) sweet chilli sauce
Method
- Combine all ingredients in a mixing bowl until a smooth batter forms.
- Add your chosen flavour ingredients and combine.
- Scoop into lined muffin trays and freeze until the morning, or when you’re ready to bake.
- Bake from frozen in a pre-heated oven at 180°C for 20 to 25 minutes.
