Ingredients
375g
Eskort Peppadew® Pepper & Feta Pork Sausages
200g vine or cherry tomatoes
125 ml (½ C) red onions, chopped
15 ml (1 T) thyme
30 ml (2 T) cooking oil
Batter
560 ml (2¼ C) flour
3 ml (½ t) salt
2 eggs
187 ml (¾ C) milk
Method
Preheat oven to 200°C.
Place sausages, tomatoes, onions, thyme and oil in an oven dish and bake for 15 minutes.
While the sausages are in the oven, combine flour and salt in a mixing bowl and make a well in the middle.
Break eggs into the well and mix with an electric mixer until smooth.
Add milk and mix well.
Pour the batter over the cooked sausages and bake for another 20 minutes
Serve
Serve with a fresh salad and smooth cheese.
