Ingredients

  • 125g Eskort Pork Pastrami
  • 150g bocconcini mozzarella balls
  • ±7 marinated sun-dried tomatoes
  • 1 handful fresh rocket
  • 1 small handful fresh basil leaves
  • Salt and black pepper, to taste
  • Drizzle of balsamic reduction

Method

  1. On a clean surface or piece of cling film, lay out the pork pastrami slices slightly overlapping to form a rectangular sheet.
  2. Tear the bocconcini into smaller pieces and arrange them in a line across the centre of the pastrami sheet.
  3. Add the sun-dried tomatoes, rocket, and basil leaves on top of the cheese.
  4. Season with salt and black pepper to taste.
  5. Carefully roll up the pastrami sheet, sushi-style, using the cling film to help keep it tight.
  6. Slice into bite-sized rounds and drizzle with balsamic reduction just before serving.
